Enhancing the stability of oil-in-water emulsions by non-covalent interaction between whey protein isolate and hyaluronic acid

Summary: This study investigated the effect of non-covalent interactions between hyaluronic acid (HA) and whey protein isolate (WPI) on the stability of oil-in-water emulsions. The addition of HA increased electrostatic repulsion and reduced particle size of WPI. HA altered the secondary structure of WPI and improved the emulsion's viscosity and interfacial network structure. Emulsions with 0.8% HA showed good dispersion and homogeneity after storage. Complexation with HA significantly improved the rheological and emulsifying properties of WPI, making it suitable for various treatments. The study highlights the potential application of HA in emulsified foods.

Efficient production of hyaluronic acid by Streptococcus zooepidemicus using two-stage semi-continuous fermentation

Summary: A semi-continuous fermentation process was developed to improve the production efficiency of hyaluronic acid, resulting in a titer of 14.60 g/L and a productivity of 1.01 g/L/h. Addition of recombinant hyaluronidase SzHYal further enhanced the titer to 29.38 g/L with a productivity of 1.13 g/L/h after 24 h. This newly developed fermentation process provides a promising strategy for industrial production of hyaluronic acid and related polysaccharides.

Development of propolis extract-loaded nanoparticles with chitosan and hyaluronic acid for improving solubility and stability

Summary: To overcome the limitations of low solubility and instability, researchers encapsulated propolis extract in nanoparticles using chitosan and hyaluronic acid as wall materials. The optimal ratio for the formulation of these nanoparticles was found to be 4:7 for chitosan and hyaluronic acid, and 1:2 for the core to wall material. These nanoparticles significantly increased the solubility and stability of the propolis extract, as well as maintained higher levels of total flavonoid content and DPPH radical scavenging effects after heat treatment and storage.

Emulsions stabilised by casein and hyaluronic acid: Effects of high intensity ultrasound on the stability and vitamin E digestive characteristics

Summary: This study aimed to prepare an emulsion stabilised by an ultrasound-treated casein (CAS)-hyaluronic acid (HA) complex and to protect vitamin E during in vitro digestion. The high-intensity ultrasound (HIU) treatment significantly improved the emulsifying properties of the CAS-HA complex by changing the intermolecular interactions and reducing the particle size. The stability of the emulsion was the best when treated at 150 W for 10 min, which could be attributed to the enhanced adsorption capacity of the CAS-HA complex at the oil-water interface and the viscosity of the formed emulsion. In vitro digestion experiments revealed that the emulsion stabilised by the ultrasound-treated CAS-HA complex had a good protective effect on vitamin E.

Summary: Advanced vacuum ultraviolet TiO2 photocatalysis with an oxygen nanobubble system (VUV-TP-NB) was used to produce high-quality low molecular weight hyaluronic acid (LMW-HA) from high molecular weight HA (HMW-HA). The VUV-TP-NB treatment resulted in a satisfactory LMW-HA yield with low endotoxin levels and no structural changes. Compared to acid and enzyme hydrolysis methods, VUV-TP-NB showed similar degradation degree and reduced process time by at least 8-fold. This nanobubble-based photocatalysis system can be used cost-effectively for biosafe LMW-HA production in various applications.

Development and characterization of a casein-hyaluronic acid emulsion gel with high water-holding capacity and excellent rheological properties for 3D printing

A 0.08% HA emulsion gel exhibited excellent rheological properties during the 3D printing process and produced accurate and self-supporting printed shapes. A comparative study on cross-linking of fibrillar gel prepared by tilapia collagen and hyaluronic acid with EDC/NHS and genipin

Summary: Chemical cross-linking is an important step for enhancing the properties of collagen-based materials. This study compared the cross-linking of collagen-based fibrillar gels using genipin and EDC/NHS, and found that genipin resulted in a higher degree of cross-linking. ATRFTIR and XPS analysis revealed that EDC/NHS formed short-range cross-linking through amino and carboxyl groups, while genipin induced long-range cross-linking through nucleophilic reactions. XRD and SEM showed that the structural integrity of the gels was improved after cross-linking, but fibril bundles disaggregated into thinner fibrils. Interestingly, the appearance and migration of L929 fibroblasts were influenced by the cross-linking degree. These results demonstrate the potential of genipin-cross-linked aquatic collagen-based fibrillar gels as biomaterials.
