Effects of different cooking techniques on the carotenoids composition, phenolic contents, and antioxidant activity of spinach leaves

Summary: Leafy vegetables like spinach contain various health-promoting compounds that can be affected by different cooking techniques. This study investigated how boiling, frying, microwaving, thawing, and sonication affect the composition of carotenoids and other bioactive compounds in spinach leaves. The results showed that the carotenoid content in spinach was influenced by the different treatment methods, with boiling and microwave heating leading to an increase in certain carotenoids, while frying had a negative effect. Treated samples also showed variations in phenolic, flavonoid, anthocyanin contents, and DPPH scavenging activity, with frying, thawing, microwave, and sonication treatments showing different levels of retention.

Foliar application of micronutrients improves the growth, yield, mineral contents, and nutritional quality of broccoli (Brassica oleracea L.)

Summary: This study aimed to enhance the growth, yield, and quality of broccoli through foliar application of zinc and boron, alone and in combination. The results showed that this treatment increased plant height, stem length and diameter, number of leaves, leaf length and width, root fresh and dry weight, number of florets, head diameter and weight, chlorophyll levels, carotenoids, and nitrogen and potassium concentration in leaves and head. The study concluded that foliar application of different micronutrients improves the production and quality of broccoli.

Effects of Different Cooking Methods on Physicochemical and Bioactive Compounds of Selected Green Vegetables in Northeastern Region, Bangladesh

Overall, cooking altered the physical and nutritional content of the food, depending on the vegetable and cooking method.
