Investigation potential of hydrocolloids in meat analogue preparation

Xanthan, carboxymethyl cellulose, and guar gum improved the flow-oriented structure and fiber formation, but only xanthan increased water holding capacity. Xanthan also increased the anisotropy index of samples, while guar gum increased tensile stress.

The trend towards natural products has further highlighted the use of carob due to its excellent nutritional and therapeutic profile. Carob bean gum is extensively used in the food industry. This review focuses on the nutritional composition, bioactive profile, functional properties, and recent findings on carob.

The structure and dynamics of locust bean gum in aqueous solution

Summary: Locust bean gum (LBG) is widely used in various industries, and understanding its solution behaviour is crucial for formulation design. This study investigated the structure and dynamics of LBG in aqueous solution using different techniques. It was found that steady state shear rheology mainly probes the dispersed LBG fraction, while scattering response is dominated by supramolecular LBG aggregates. Three viscosity-concentration regimes were identified, with scaling behaviour consistent with predictions for neutral flexible polymers. Our study provides comprehensive insight into the structure and dynamics of aqueous LBG solutions, paving the way for a better understanding and control of LBG-based formulations.

Influence of selected gums on the foaming properties of egg white powders: Kinetics of foam formation and baking performance

Summary: The influence of neutral locust bean gum (LBG), guar gum (GG), and anionic xanthan gum (XG) on the foaming and baking properties of egg white (EW) powders were investigated in this study. The addition of these gums increased the surface tension, particle size, viscosity, and interfacial adsorption modulus of reconstituted EW solutions, while decreasing surface hydrophobicity. The addition of gums, especially LBG and GG, reduced the whipping time in the preparation of cake batter by facilitating the rapid infiltration of air in foam. The inclusion of neutral gums improved the baking performance of EW powders by increasing the foaming rate and capacity.

Locust bean gum provides excellent mechanical and release attributes to soy protein-based natural hydrogels

Phenolic Profile, Antioxidant Activity, and Chemometric Classification of Carob Pulp and Products

Summary: Carob and its derived products have gained attention for their health-promoting effects, mainly due to their phenolic compounds. Analysis of carob samples revealed gallic acid and rutin as the most abundant compounds, and spectrophotometric assays showed their antioxidant capacity and total phenolic content. Thermal treatment and geographical origin significantly affect the phenolic composition and antioxidant activity of carob products. Chemometric analysis suggests that polyphenols and antioxidant capacity can serve as chemical markers for classifying carob and its derived products.

However, it had only moderate activity against fungal strains and resulted in genotoxic effects at high concentrations.

Rheological property, ?-carotene stability and 3D printing characteristic of whey protein isolate emulsion gels by adding different polysaccharides

Summary: This paper investigated the rheological property, β-carotene stability and 3D printing characteristic of whey protein isolate (WPI) emulsion gels by adding guar gum (GG), locust bean gum (LBG), xanthan gum (XG) and gum arabic (GA). The results showed that all samples exhibited shear thinning behavior and elastic characteristic. XG could reduce water mobility and increase water holding capacity (WHC) of WPI emulsion gel. GG and LBG increased gel strength, hardness and gumminess, while reduced springiness, cohesiveness and chewiness of emulsion gels. GG sample had the best printing performance, more uniform network structure and better stability of β-carotene. This study provided a theoretical basis for 3D printing functional food.

Comparison of mixing and non-linear viscoelastic properties of carob germ glutelins and wheat glutenin

Summary: This study used response surface methodology to optimize the addition of xanthan gum and locust bean gum to gluten-free rice flour supplemented by chickpea flour. The analysis revealed that linear terms significantly affected most parameters, with xanthan gum having a more pronounced effect, while interaction terms had a positive impact on specific volume but a negative impact on water activity of the biscuits. Overall, optimized conditions were developed to maximize specific volume and minimize water activity and hardness of the biscuits.
