Stability and release mechanisms of double emulsions loaded with bioactive compounds; a critical review

Fatemeh Heidari et al.

Summary: Double emulsions, dispersion systems where liquid droplets of one dispersed liquid are further dispersed in another liquid, are widely used in the food and pharmaceutical industries for co-encapsulation of hydrophilic and hydrophobic compounds. However, their stability and release mechanisms pose challenges, and studying factors affecting stability and release can help optimize their formulation for different industries.

A combined approach for modifying pea protein isolate to greatly improve its solubility and emulsifying stability

Zijian Zhi et al.

Summary: This study presents a novel approach to improve the solubility and emulsion stability of pea protein by combining pH-shifting with ultrasound and heating. The modified pea protein showed increased solubility and improved emulsion stability, suggesting its potential for wider application in the food and pharmaceutical industries.

Sequential adsorption of whey proteins and low methoxy pectin at the oil-water interface: An interfacial rheology study

Hao Li et al.

Summary: Protein-polysaccharide bilayers have shown great potential in the design of emulsion stabilizers. This study investigates the sequential adsorption of whey protein isolate (WPI) and low methoxy pectin (LMP) at the oil-water interface as a function of pH. The results demonstrate that the combination of protein and polysaccharide can significantly enhance interfacial viscoelasticity, with the magnitude depending on pH conditions.

Conformational state and charge determine the interfacial film formation and film stability of β-lactoglobulin

Helena Kieserling et al.

Summary: Our study revealed that protein conformational state and charge influence the mechanical stability of protein-stabilized emulsions, impacting the stability of the protein film at the oil/water-interface. Under different pH conditions, structural changes and interactions of beta-lactoglobulin vary, leading to alterations in the stability and molecular density of the protein film.

Effect of Surfactant Molecular Structure on Emulsion Stability Investigated by Interfacial Dilatational Rheology

Yuejie Jin et al.

Summary: The study investigated the influence of the hydrophobic chain structures of surfactants on the interfacial film properties and emulsion stability using PGPR and polyglycerol-2 dioleate as model surfactants in constructing water-in-oil emulsions. The results showed that PGPR with a branched chain structure formed interfacial film with higher viscoelastic modulus, leading to good emulsion stability, while polyglycerol-2 dioleate with a straight chain structure had lower viscoelastic modulus and resulted in unstable emulsions.

Interfacial dilatational and emulsifying properties of ultrasound-treated pea protein

Lei Sha et al.

Summary: High-intensity ultrasound treatment significantly improved the solubility, hydrophobicity, and particle size of pea protein isolate, leading to enhanced protein adsorption at the oil-water interface and improved emulsifying properties. The multilayer structure formed by PPIUS contributed to the physical stability of emulsions, making them less susceptible to lipid oxidation during storage compared to control protein.
