Black garlic melanoidins inhibit in vitro α-amylase and α-glucosidase activity: the role of high-molecular-weight fluorescent compounds

Summary: This study analyzed the structural characteristics of black garlic melanoidins (MLDs) and investigated their inhibitory activity on α-amylase and α-glucosidase in vitro. The results showed that MLDs are heterogeneous macromolecular polymers with a skeletal structure similar to sugar chains. The high-molecular-weight fluorescent components played a crucial role in the inhibitory activities of the enzymes.

Protective effects of cyanidin-3-O-glucoside on BPA-induced neurodevelopmental toxicity in zebrafish embryo model

Summary: This study investigated the protective effects and possible mechanism of cyanidin-3-O-glucoside (C3G) against bisphenol A (BPA)-induced neurodevelopmental toxicity in zebrafish embryos/larvae. Results showed that C3G significantly attenuated BPA-induced deficit in locomotor behavior and restored the abnormal changes in brain morphology. Furthermore, C3G improved the transcription of neurogenesis related genes, enhanced the antioxidative defense system, and reduced cell apoptosis induced by BPA.

Cinnamaldehyde alleviates zearalenone-induced LS174T cell apoptosis, barrier dysfunction and mucin reduction through JNK/NF-kappa B signaling pathway

Summary: As a natural aldehyde organic compound, cinnamaldehyde (CA) showed protective effects against zearalenone (ZEA)-induced apoptosis, barrier dysfunction, and mucin reduction in LS174T cells. CA significantly prevented the decline in cell viability, reversed the increase of the LDH level, cell cycle disruption, and apoptosis induced by ZEA. It also alleviated the reduction of mucin secretion and the expression of mucin 2 and tight junction proteins in LS174T cells caused by ZEA exposure. CA protects cells against ZEA-induced damage through the JNK/NF-kappa B signaling pathway.

Protective effects of lycopene against zearalenone-induced reproductive toxicity in early pregnancy through anti-inflammatory, antioxidant and anti-apoptotic effects

Lycopene reduces oxidative stress and inflammation by its antioxidant and anti-inflammatory effects, as well as improves uterine cell proliferation and apoptosis. Electrochemical oxidation diminished toxicity of zearalenone significantly, while reduction increased

Summary: In this study, ZEN was completely degraded in solution within 8 minutes and 20 minutes through electrochemical oxidation and reduction. The structure of ZEN products was analyzed and their toxicity was evaluated. The results showed that electrochemical oxidation products had lower toxicity, while electrochemical reduction products had higher toxicity. Based on these findings, electrochemical oxidation was successfully applied to degrade ZEN in contaminated wheat.

Evaluation on the physicochemical and digestive properties of melanoidin from black garlic and their antioxidant activities in vitro
