Glucosinolate Profiles in Different Organs of 111 Radish Accessions and Candidate Genes Involved in Converting Glucobrassicin to 4-Hydroxyglucobrassicin

Summary: We analyzed the glucosinolate (GSL) compositions and levels in four organs of 111 radish accessions. Our results revealed significant variations in GSL levels among different species and groups, and we identified some genotypes/groups with special GSL profiles. Furthermore, we identified a candidate gene (RsCYP81F2.3) that may be involved in regulating GSL compositions and levels.

Effect of processing and accelerated storage on the volatile composition and sensory profile of a tomato soup

Effect of processing and accelerated storage on the volatile composition and sensory profile of a tomato soup

Summary: The volatile and sensory profile of pasteurized and sterilized tomato soup, as well as their changes during accelerated storage, were studied. The results showed that sterilization had a greater impact on storage, leading to enhanced dark odour, burnt flavour, and complexity. Pasteurized soup had a more pronounced green odour, vegetable flavour, harmony, and freshness. Changes in volatile compounds were associated with the formation of furans and the decline of unsaturated aldehydes.

Revalorized broccoli by-products and mustard improved quality during shelf life of a kale pesto sauce

Summary: The study investigated the effects of incorporating revalorized Bimi leaves and/or mustard as supplementary ingredients in developing an innovative kale pesto sauce. Results showed that mustard addition helped to stabilize pH changes and enhance the conversion of glucoraphanin to bioactive products, while the addition of B + M reduced bitterness and improved the overall quality of the sauce after 20 days of storage at 5 degrees C.
