Effects of whey protein isolate and ferulic acid/phloridzin/naringin/ cysteine on the thermal stability of mulberry anthocyanin extract at neutral pH

Summary: This study investigated the effects of whey protein isolate (WPI) and four copigments, including ferulic acid (FA), phloridzin, naringin, and cysteine (Cys), on the thermal stability of mulberry anthocyanin extract (MAE). WPI and copigment (except for Cys) addition could protect anthocyanin from degradation to a certain degree, with FA showing the best effect. The combination of MAE-WPI-FA exhibited the best stabilizing effect, reducing color change and anthocyanin degradation.
