Effect of cellulose nanocrystal-stabilized cinnamon essential oil Pickering emulsions on structure and properties of chitosan composite films

Jian Liu et al.

Summary: By incorporating cellulose nanocrystal-stabilized cinnamon essential oil Pickering emulsions into chitosan-based films, researchers have successfully improved the water-resistance and antibacterial activity of the films, although it may reduce the mechanical strength. This method not only significantly increases the contact angle and inhibition zone of the composite films, but also improves the tensile strength of the films, showing potential for packaging applications.

Preparation and characterization of oleogel-in-water pickering emulsions stabilized by cellulose nanocrystals

Wenhui Qi et al.

Summary: The study showed that increasing the concentration of beeswax and oleogel led to larger droplet size, higher viscosity, and stronger gel strength in the emulsion. On the other hand, increasing the CNCs concentration resulted in smaller droplet size, higher viscosity, and increased gel strength.

Resveratrol loaded Pickering emulsions stabilized by OSA modified rice starch granules

M. Matos et al.

Summary: Resveratrol, a photosensitive bioactive molecule, has low solubility in water or triglyceride oils, but can be solubilized in essential oils for use in emulsions. This study found that stable Pickering emulsions could be prepared using OSA-modified rice starch granules, even with partial coverage. Emulsions containing 30% v/v mixture of orange oil in Miglyol as the dispersed phase were suitable as a resveratrol carrier system, achieving encapsulation efficiency values close to 90%.

Polysaccharide-based Pickering emulsions: Formation, stabilization and applications

Fengzhan Cui et al.

Summary: This paper reviews recent advances in using natural polysaccharides, modified polysaccharides, and polysaccharide complexes as particles to form and stabilize Pickering emulsions, focusing on the impact of particle properties, emulsion composition, and environmental conditions on the stabilization and properties of polysaccharide-based Pickering emulsions. In addition, the potential applications of these emulsions are discussed, including encapsulating and delivering bioactive ingredients, controlling the digestion of emulsified lipids, and creating fat substitutes.

Biomolecule-based pickering food emulsions: Intrinsic components of food matrix, recent trends and prospects

Anuj Niroula et al.

Summary: This article discusses the importance of dietary fat in improving the bioaccessibility of lipophilic micronutrients in food matrix, and the recent extensive research on particle-stabilized emulsions known as 'Pickering emulsions'. Biopolymers have emerged as promising Pickering particles, with hydrocolloids such as polysaccharides and proteins being widely studied for their potential in food-grade applications. Different strategies for incorporating lipophilic bioactive molecules into food-grade Pickering emulsions have been systematically reviewed.

Production of D-limonene-loaded Pickering emulsions stabilized by chitosan nanoparticles

Elham Alehosseini et al.

Summary: In this study, the encapsulation of D-limonene in Pickering emulsions stabilized by chitosan nanoparticles was optimized using response surface methodology. The stability of the emulsions increased at higher CSNPs contents, leading to a significant increase in viscosity. Overall, CSNPs were shown to be a suitable stabilizer for D-limonene-loaded emulsions and a food-grade carrier for bioactive compounds.

Synthesis and characterization of methyltetrahydrophthalic anhydride esterified corn starch by wet method

Ting Luo et al.

Summary: This study aims to synthesize a novel esterified starch with an alicyclic structure using methyltetrahydrophthalic anhydride (MeTHPA). The esterification modification significantly improved the toughness and hydrophobicity of the starch film, making it suitable for wrap sizing of polyester/cotton blended yarns. The results show that MeTHPA esterified corn starch has potential applications in enhancing the properties of starch films.
