Enhancing the stability of oil-in-water emulsions by non-covalent interaction between whey protein isolate and hyaluronic acid

Summary: This study investigated the effect of non-covalent interactions between hyaluronic acid (HA) and whey protein isolate (WPI) on the stability of oil-in-water emulsions. The addition of HA increased electrostatic repulsion and reduced particle size of WPI. HA altered the secondary structure of WPI and improved the emulsion's viscosity and interfacial network structure. Emulsions with 0.8% HA showed good dispersion and homogeneity after storage. Complexation with HA significantly improved the rheological and emulsifying properties of WPI, making it suitable for various treatments. The study highlights the potential application of HA in emulsified foods.

Interfacial effects of gallate alkyl esters on physical and oxidative stability of high fat fish oil-in-water emulsions stabilized with sodium caseinate and OSA-modified starch

Summary: The effects of sodium caseinate (SC) and its combination with OSA-modified starch (SC-OS; 1:1) on the physical and oxidative stability of high-fat fish oil-in-water emulsion were studied. The SC emulsion had smaller droplets and higher viscosity due to fast adsorption. Both emulsions exhibited non-Newtonian and shear-thinning behavior. SC emulsion showed lower lipid oxidation due to better Fe2+ chelating activity. Short-chain gallates (G1 > G0 similar to G3) in SC emulsion had a synergistic effect against lipid oxidation, while G8, G12, and G16 added emulsions showed higher lipid oxidation due to internalization.

Summary: In this study, zein-soy isoflavone complex (ZSI) emulsifiers were fabricated using ultrasound-assisted dynamic high-pressure microfluidization. The treatment enhanced the surface hydrophobicity, zeta potential, and soy isoflavone binding capacity of ZSI, while reducing the particle size. The treated ZSI demonstrated excellent viscoelasticity, thixotropy and creaming stability due to their neutral contact angles.

Effects of homogeneous and ultrasonic treatment on casein/ phosphatidylcholine complex-emulsions: Stability and bioactivity insights

Summary: This study aimed to improve the functional properties of casein by combining it with phosphatidylcholine (PC) to form a stable complex (CAS/PC) and performing physical modifications (homogeneous and ultrasonic treatment). The results showed that PC addition and ultrasonic treatment could decrease the particle size and increase the stability of the emulsion. Chemical structural analysis revealed that these modifications enhanced the solubility and stability of the emulsion. Additionally, PC addition and ultrasonic treatment increased the total FFA release and improved the thermal stability of the system.

Preparation and stability characterization of soybean protein isolate/sodium alginate complexes-based nanoemulsions using high-pressure homogenization

The relationship between charge intensity and bioactivities/processing characteristics of exopolysaccharides from lactic acid bacteria

Summary: The application of plant-based protein gels induced by lactic acid bacteria fermentation is closely related to the bioactivities and processing characteristics of exopolysaccharide (EPS). Among the EPS produced by different strains of Lactobacillus, CEPS showed the highest inhibition rates against various enzymes and possessed the highest water solubility index and water holding capacity. The EPS had high melting points, and their flow behavior and temperature-dependent behavior were well fitted with specific models, while CEPS had high negative charge intensity as supported by zeta potential, which could be used to evaluate bioactivities.

Effects of psyllium husk powder on the emulsifying stability, rheological properties, microstructure, and oxidative stability of oil-in-water emulsions

Probing the generation mechanism of emulsion based on shearing actions between multiphase fluids in porous media

The structural breakdown and recovery of HIPEs were affected by protein concentration and pH, while the hysteresis behavior was determined by protein concentration and the magnitude of anti-thixotropy was influenced by pH. Overall, challenging the physical integrity of concentrated emulsions under high shear is an effective method to characterize microstructural changes and stability of HIPEs in foods.
