Development, characterization and application of intelligent/active packaging of chitosan/chitin nanofibers films containing eggplant anthocyanins

Summary: This study aimed to develop intelligent/active packaging for monitoring the freshness of pork using chitosan/esterified chitin nanofibers (CN) film matrix and anthocyanins from eggplant peel extract (EE). The results showed that CN filled into the film matrix and bonded to chitosan via electrostatic interactions and hydrogen bonding. The addition of EE formed hydrogen bonds with chitosan and CN, improving the mechanical and barrier properties of the films. When CN content was 5 wt%, the tensile strength, elongation at break, water vapor, and oxygen barrier properties of chitosan film significantly increased. Adding EE also improved the antibacterial and antioxidant capacities of the film. The chitosan-CN-EE films effectively indicated the freshness of pork during storage and have potential for intelligent and active food packaging applications.
