Mouthfeel of Beer: Development of Tribology Method and Correlation with Sensory Data from an Online Database

The study found clear differences between alcoholic and non-alcoholic beers, as well as beers with high or low mouthfeel ratings. Physicochemical Properties and Mouthfeel in Commercial Plant-Based Yogurts

Summary: There is a need for more research to understand the relationship between physicochemical properties and mouthfeel sensations in plant-based yogurts. This study determined the physicochemical properties of different commercial plant-based yogurt alternatives and compared them to dairy yogurts. The results showed significant differences in flow behavior and rheology between dairy and plant-based yogurts, and highlighted the importance of large deformation rheology in developing plant-based yogurt alternatives. The study also emphasized the complementary role of instrumental and sensory methods in the development of cost-effective and timely plant-based yogurts.
