A galacturonic acid-rich polysaccharide from Diospyros kaki peel: Isolation, characterization, rheological properties and antioxidant activities in vitro

Yanlong Cui et al.

Summary: This research investigated the structural characteristics and antioxidant activity of a galacturonic acid-rich polysaccharide (PPP-2) from Diospyros kaki peel. PPP-2 was extracted and purified, and it possessed a triple helical structure. The inhibitory concentration (IC50) of PPP-2 against various radicals was determined. The study suggested that PPP-2 could be a potential natural antioxidant for pharmaceuticals or functional food.
