Phospholipids molecular species, proteins secondary structure, and emulsion microstructure of egg yolk with reduced polar and/or nonpolar lipids

Summary: This study examined the effects of supercritical-CO2, hexane, and ethanol treatments on the molecular species of phospholipids, protein secondary structure, and emulsion microstructure of egg yolk. The results showed that supercritical-CO2 treatment had the highest phospholipid molecular species, while hexane, ethanol at room temperature, and ethanol at 65 degrees C had fewer species. Protein secondary structure was the highest in ethanol at 65 degrees C and the lowest in the control group. However, the emulsion stability was significantly improved with the addition of supercritical-CO2-treated egg yolk.

High Fischer ratio oligopeptides from hard-shelled mussel: Preparation and hepatoprotective effect against acetaminophen-induced liver injury in mice

Summary: This study aimed to prepare high Fischer ratio oligopeptides from hard-shelled mussel (HFOPs-HM) and investigate their hepatoprotective effects against acetaminophen-induced liver injury in mice. HFOPs-HM significantly improved liver function, decreased liver enzyme activities, increased antioxidant levels, and reduced liver inflammation. This suggests that HFOPs-HM could be used as a functional dietary molecule for alleviating drug-induced liver injury.

Extending shelf life of chilled pork meat by cinnamaldehyde nano emulsion at non-contact mode

Summary: This study investigated the impact of headspace release of cinnamaldehyde from cinnamaldehyde nano emulsion (CNE) on the shelf life of chilled pork meat. The CNE was prepared by encapsulating cinnamaldehyde in an oil-in-water emulsion using Tween 80 as an emulsifier. The CNE exhibited a mean particle size of 94.37 +/- 2.12 nm and a polydispersity index of 0.227 +/- 0.008. The release of cinnamaldehyde from the CNE in a sealed package gradually reduced the impact of direct contact on the flavor of the chilled meat, resulting in reduced exudate loss, pH, total volatile basic nitrogen, and microbial colonies, thereby extending the shelf life of chilled meat.

Structural characteristics of a low molecular weight velvet antler protein and the anti-tumor activity on S180 tumor-bearing mice

Summary: In this study, a velvet antler protein (VA-pro) was extracted from velvet antler residue and its composition, structural characteristics and in vivo anti-tumor activities were investigated. The results showed that VA-pro had high purity, a relatively low molecular weight, and high contents of Pro, Gly, Glu and Ala. VA-pro possessed similar protein sequence, isoelectric point and amino acid compositions to hypothetical protein G4228_020061. In vivo experiments confirmed that VA-pro could improve body weights, immune organ indices, and inhibit solid S180 tumors growth by inducing S phase cell cycle arrest.

Utilizing animal by-products in European slaughterhouses to reduce the environmental footprint of pork products

This study specifically focuses on improving the utilization of animal by-products in pork production. By comparing different handling methods and conducting scenario analyses, the study demonstrates that improving the utilization of animal by-products can significantly reduce the environmental impact of pork production. The study also highlights the importance of accurate evaluation methods and identifies pet feed as the best waste treatment option for animal by-products.

Extraction, purification, structure, and antioxidant activity of polysaccharide from Rhodiola rosea

Summary: In this study, a pectic polysaccharide (RRP-4) was extracted from Rhodiola rosea using a cold-water extraction method. RRP-4 showed good antioxidant activity and immunomodulatory effects. It has the potential to be used as a natural antioxidant and immunoregulation adjuvant for the treatment of oxidative damage and immunosuppression-related diseases.

Preparation and anti-tumor effect of pig spleen ethanol extract against mouse S180 sarcoma cells in vivo

Summary: Numerous studies have shown the anti-tumor effects of extracts derived from animal spleens, but the biological activity of ethanol extract obtained from pig spleen has not been tested. In this study, pig spleen ethanol extract (PSE) with immune activity was obtained, providing a theoretical basis for the development of pig spleen as an anti-tumor drug. PSE was found to be a high-purity protein complex mainly composed of hydrophobic amino acids, with alpha-helix and beta-sheet secondary structures. In vivo, PSE inhibited the growth of S180 tumor cells and improved immune function.

The dual-function of bioactive peptides derived from oyster (Crassostrea gigas) proteins hydrolysates

Summary: Oyster proteins obtained from fresh oysters showed increased anti-diabetic and antioxidant effects after simulated gastrointestinal digestion. The α-glucosidase inhibitory activity, α-amylase inhibitory activity, DPPH radical scavenging activity, and ABTS radical scavenging activity of the oyster protein gastrointestinal digest were significantly increased. Additionally, the degree of hydrolysis, beta-turn structure, fluorescence intensity, free amino acid, and low molecular weight peptide content also increased during simulated gastrointestinal digestion.

Correlation between the secondary structure and surface activity of β-sheet forming cationic amphiphilic peptides and their anticancer activity

Summary: This study focused on the development and characterization of short cationic amphiphilic beta-sheet forming anticancer peptides. The peptides exhibited selective anticancer activity influenced by their surface activity and secondary structure in hydrophobic surfaces, leading to disruption of mitochondrial membranes and apoptosis. Insights gained from the study can be used to design new ACPs with improved anticancer activity and lower toxicity against normal cells.

Antioxidant peptides from protein hydrolysate of skipjack tuna milt: Purification, identification, and cytoprotection on H2O2 damaged human umbilical vein endothelial cells

Summary: In this study, a neutral protease hydrolysate with the highest degree of hydrolysis and antioxidant activity was obtained from degreased skipjack tuna milt. Thirteen antioxidant oligopeptides were identified, and five of them showed the highest ferric-reducing power and radical scavenging activity. Additionally, these peptides exhibited significant protective function against oxidative damage.
