Extensive research has been conducted on the bioactivity of protein hydrolysates, particularly through in vitro tests, and some studies have examined their efficacy in animal models and human subjects. However, there is limited published literature on the functionality and effects of processing, storage, and gastrointestinal digestion on the bioactivity of these peptides in food matrices. This review aims to summarize the existing literature on protein hydrolysates as functional ingredients, including their processing, storage, and simulated gastrointestinal digestion, and their impact on the bioactivity of these peptides.

Summary: The combination of acidic sophorolipid nanoparticles (ASL NPs) and LL37 peptides demonstrates an effective antimicrobial effect against various bacteria in the presence of human serum and trypsin. Washing tomato fruits with sophorolipids before inoculation of B. cinerea could inhibit gray mold development by up to 96.27%.
