Dough rheological properties, texture, and structure of high-moisture starch hydrogels with different potassium-, and calcium-based compounds

Summary: This study evaluated the effects of four potassium-based (potassium alginate, PA; potassium dihydrogen phosphate, KDP) and calcium-based (calcium carbonate, CC; calcium silicate, CSi) compounds on the properties of pastes, dough, and high-moisture starch hydrogels derived from potato starch. The results showed that the addition of these compounds significantly improved the tensile strength of the hydrogels by enhancing the network structure and reducing water mobility. This study provides a theoretical basis for the formulation design of alum-free hydrogel derived products.

Effects of erythritol on rheological properties of rice flour and structural characteristics of extruded dried rice noodles with rapid rehydration behaviors

Summary: The aim of this research was to improve the rehydration and edible quality of dried rice noodles by adding erythritol, a natural sweetener. Results showed that erythritol significantly decreased the water contact angle, crystallization degree, crystalline layer thickness, and enthalpy of gelatinization of dried rice noodles while loosening their network structure. The addition of 20% (w/ w) erythritol greatly enhanced the rehydration and edible quality, reducing rehydration time, cooking losses, and cooking breakage rate and increasing tensile strain, chewing hardness, and toughness. The results confirmed that the addition of erythritol is an effective method for producing high-quality dried rice noodles.

Hydration and plasticization effects of maltodextrin on the structure and cooking quality of extruded whole buckwheat noodles

Summary: The structure and cooking quality of extruded whole buckwheat noodles can be improved by adding maltodextrin. The hydrogen bonds formed between maltodextrin and buckwheat starch reduce the crystallinity of the noodles and enhance their plasticity. The addition of maltodextrin also decreases cooking time and cooking loss, and improves the texture properties of the noodles.

Physicochemical properties and microstructural behaviors of rice starch/soy proteins mixtures at different proportions

The presence of soy protein resulted in decreased swelling power, inhibited starch gelatinization, and reduced viscosity and elasticity of the paste.
