Changes in protein oxidation, structure, and thermal stability of chicken breast subjected to ultrasound-assisted immersion freezing during frozen storage

Summary: The influence of ultrasound-assisted immersion freezing (UF), immersion freezing (IF), and air freezing (AF) on protein oxidation, structure, and thermal stability of chicken breast during frozen storage was evaluated. UF samples showed lower carbonyl content, dityrosine content, and surface hydrophobicity of myofibrillar protein (MP) compared to IF and AF samples (P < 0.05), as well as higher free amino group content and total and reactive sulfhydryl content (P < 0.05). UF also effectively delayed protein structure deterioration and loss of thermal stability during frozen storage (P < 0.05). UF samples at 180 days had similar protein structures and quality characteristics to IF samples at 90 days or AF samples at 60 days.

Effect of Low-Voltage Electrostatic Field on Oxidative Denaturation of Myofibrillar Protein from Lamb-Subjected Freeze-Thaw Cycles

Summary: This study investigated the effect of low voltage electrostatic field (LVEF) on the oxidative denaturation of myofibrillar proteins (MPs) in repeatedly freeze-thaw (F-T) lamb. F-T cycles intensified MP oxidative denaturation and structural destruction, with the influences becoming more severe after multiple cycles. Samples treated with LVEF-assisted F-T cycles (LFT) showed lower carbonyl/dityrosine content and surface hydrophobicity, higher sulfhydryl content and solubility, and improved activity and structural properties compared to common F-T cycles (CFT). Although the effectiveness of LVEF in suppressing protein oxidation decreased with more F-T cycles, it remained significant compared to samples without LVEF treatment. These findings provide theoretical evidence for the use of LVEF in freezing, storing, and transporting frozen meat.

Insight into the protein oxidation impact on the surface properties of myofibrillar proteins from bighead carp

Summary: The influence of oxidative modifications of myofibrillar proteins (MPs) on their surface properties was investigated in this study. Oxidized MPs were measured for oxidative modifications (deamination, formation of disulfide bonds and Schiff bases), particle size, net surface charge, and binding ability of volatiles (2-enthylfuran, 1-octen-3-ol, hexanal, and octanal). Molecular docking of volatiles with actomyosin was performed, and specific oxidative modifications (monoxidation and deamination) of MPs were determined using LC-MS/MS. The results showed that oxidative modifications of MPs changed their surface properties, including enhanced surface hydrophobicity and decreased affinity to volatile compounds and water. This study provides evidence of how protein oxidation affects the properties of MPs and deteriorates fish meat quality.

Effect of water change on quality deterioration of Pacific white shrimp (Litopenaeus vannamei) during partial freezing storage

Summary: This study evaluated the correlation between water changes and quality deterioration of Litopenaeus vannamei during partial freezing storage. The results showed significant increases in cross-sectional area and equivalent diameter, but irregular growth in roundness and longiness of the ice crystals. Bound water and immobilized water decreased significantly, while free water increased significantly during storage. Quality determination revealed a significant decrease in total sulfhydryl and Ca2+-ATPase, but a significant increase in disulfide bonds. Correlation analysis showed significant correlations between cross-sectional area and total sulfhydryl, Ca2+-ATPase, and disulfide bonds, respectively. Additionally, significant correlations were found between water distribution index and Ca2+-ATPase, disulfide bonds. Predictive models for ice crystal growth were developed based on cross-sectional area and equivalent diameter using the Arrhenius model.

Uncovering quality changes of salted bighead carp fillets during frozen storage: The potential role of time-dependent protein denaturation and oxidation

Summary: This study aimed to investigate the relationship between quality traits and myofibrillar proteins (MPs) alteration during frozen storage of salted fish. Protein denaturation and oxidation occurred in frozen fillets, with denaturation happening first. During the initial phase of storage (0-12 weeks), changes in protein structure were closely related to water-holding capacity (WHC) and texture properties. MPs oxidation (sulfhydryl loss, carbonyl, and Schiff base formation) dominated the later stage of frozen storage (12-24 weeks) and were associated with changes in pH, color, WHC, and texture properties. Brining at 0.5 M improved WHC with fewer undesirable changes in MPs and quality traits compared to other concentrations. A recommended storage time of 12 weeks was suggested for salted frozen fish, providing valuable insights for fish preservation in the aquatic industry.

Changes in microstructure, quality and water distribution of golden pompano (Trachinotus ovatus) muscles subjected to magnetic field-assisted immersion freezing during long-term frozen storage

Summary: The effects of refrigerator freezing (RF), immersion freezing (IF), and magnetic field assisted immersion freezing (MIF) on the quality of stored golden pompano muscle were investigated. Results showed that MIF resulted in a more fine and homogeneous distribution of ice crystals throughout the storage period compared to the other groups. MIF group also had a higher water content and a more stable water state. Moreover, MIF inhibited protein degradation and lipid oxidation, maintaining a more complete tissue structure.

Mechanism of low-voltage electrostatic fields on the water-holding capacity in frozen beef steak: Insights from myofilament lattice arrays

Summary: This study examined the impact of low-voltage electrostatic field-assisted freezing on the water-holding capacity of beef steaks. The study elucidated the enhanced mechanism of water-holding capacity by investigating the dynamic changes in the arrangement of myofilaments and constructing an in vitro model. The results showed that the disorder in the arrangement of myofilaments during freezing is a key factor causing water loss, and the intervention of electrostatic field effectively reduces myofibril density while maintaining a regular lattice array through modulating electrostatic and hydrophobic interactions. Additionally, the electrostatic field inhibits the migration of immobilized water to free water, resulting in an increase in the water-holding capacity of myofibrils by 36%.
