A systematic review on the flavor of soy-based fermented foods: Core fermentation microbiome, multisensory flavor substances, key enzymes, and metabolic pathways

Summary: The characteristic flavor of fermented foods has a significant impact on consumer purchasing decisions, and scientists worldwide are concerned about its production mechanisms. The perception of food flavor involves various senses, such as olfaction, taste, vision, and oral touch, with each contributing to specific flavor properties. Soy-based fermented products are popular for their unique flavors, particularly in Asian countries where they are an important part of the diet. Microorganisms, known as the souls of fermented foods, can influence the sensory properties of soy-based fermented foods through metabolic pathways and play a role in the formation of multisensory properties. This review systematically summarizes the core microbiome and its interactions in representative soy-based fermented foods, such as fermented soymilk, soy sauce, soybean paste, sufu, and douchi. The mechanism by which the core microbial community affects multisensory flavor quality is revealed, providing important guidance for flavor-enhancement strategies and genetically engineered bacteria.

Characterization and discrimination of volatile organic compounds and lipid profiles of truffles under different treatments by UHPLC-QE Orbitrap/MS/MS and P&T-GC-MS

Truffle flavored commercial products veracity and sensory analysis from truffle and non-truffle consumers

Summary: The price of black truffle and white truffle can be significantly higher than that of cheaper edible truffle species due to their appreciated aroma and low production levels. However, the aroma of truffles is affected after using thermal treatments for food preservation. As a result, many truffle products use lower-value truffle species and add flavorings. A study of 51 products found that lower-value truffle species were frequently found in products without indicating so on the labels. Additionally, a significant number of products contained high levels of added flavorings. Sensory analysis showed that non-consumers of truffles rated flavored products more positively, while truffle consumers associated positive attributes with real black truffle products.

Transcriptome and Metabolomics Integrated Analysis Reveals MdMYB94 Associated with Esters Biosynthesis in Apple (Malus x domestica)

MdMYB94 was identified as a key regulator, as it trans-activated the MdAAT2 promoter and participated in the regulation of ester biosynthesis. Structural basis of odorant recognition by a human odorant receptor

Characterization of selected commercially available grilled lamb shashliks based on flavor profiles using GC-MS, GC x GC-TOF-MS, GC-IMS, E-nose and E-tongue combined with chemometrics

Summary: This study investigated the feasibility of using HS-SPME-GC-MS, SPME-Arrow-GC x GC-TOF-MS, HS-GC-IMS, electronic nose, and electronic tongue systems for flavor characterization of Chinese grilled lamb shashliks. A total of 198 VOCs were identified, with GC x GC-TOF-MS accounting for around 71% of the identification. By utilizing data fusion strategies, five predictive models were developed to analyze VOCs composition and brand identification of the lamb shashliks. The momentum deep belief network model outperformed other models in predicting VOCs content and identifying shashlik brands (R-2 above 0.96, and RMSE below 0.1). The combination of intelligent sensory technology and chemometrics shows promise in flavor characterization of shashliks and other food matrices.

Comparison of different drying techniques for shiitake mushroom (Lentinus edodes): Changes in volatile compounds, taste properties, and texture qualities

The rehydration, shrinkage, and microstructural characteristics of HPD mushrooms were intermediate between VFD and HAD mushrooms. Sensory quality analysis indicated that HPD mushrooms had better overall quality. Furthermore, HPD had significantly lower energy consumption than HAD and VFD. In conclusion, HPD is a commercially attractive low-energy technique for producing high-quality dried shiitake mushrooms.
