The effect of trans-resveratrol on the physicochemical properties of lipid membranes with different cholesterol content

This study investigates the role of tannic acid (TA) as a green exfoliating agent in the formation of natural rubber (NR) - molybdenum disulfide (MoS2) nanocomposites. The performance of the nanocomposites was evaluated by exfoliating MoS2 with and without TA, and by washing out the excess TA. The study demonstrates the dual function of TA as an exfoliating and reinforcing agent, and presents a green pathway for synthesizing NR nanocomposites.

Development of Zein/tannic acid nanoparticles as antioxidants for oxidation inhibition of blackberry seed oil emulsions

Summary: Zein-tannic acid nanoparticles (ZTNPs) were developed as antioxidants for inhibiting oxidation of blackberry seed oils. The spherical ZTNPs with an average diameter below 200 nm were shown to bind tannic acid to zein through electrostatic, hydrophobic, and hydrogen bonding interactions, resulting in conformational changes of zein. The binding of tannic acid significantly improved the antioxidant capacity of zein, leading to a high PTIO radical scavenging rate at pH 4 and enhanced thermal stability and resistance to lipid oxidation at pH 7.

Comparison of proanthocyanidins A2 and B2 on IgE-reactivity and epitopes in Gly m 6 using multispectral, LC/MS-MS and molecular docking

Overall, proanthocyanidins A2 were more effective in decreasing the IgE-reactivity of Gly m 6 due to more shielding or destruction of conformational epitopes and lower content of allergens and linear epitopes.

Fucoxanthin-loaded nanoparticles composed of gliadin and chondroitin sulfate: Synthesis, characterization and stability

Partition and stability of folic acid and caffeic acid in hollow zein particles coated with chitosan

Summary: Chitosan-coated hollow zein particles were developed to co-encapsulate folic acid and caffeic acid, improving the photostability of both compounds. The optimized particles exhibited small size, uniform dimension, and excellent colloidal stability. Co-encapsulation enhanced the photostability of the compounds and increased the antioxidant activity of caffeic acid after irradiation.
