Oxidation-reduction potential affects medium-chain fatty acid ethyl ester production during wine alcohol fermentation

Shi-Jin Xue et al.

Summary: This study investigated the effect of oxidation-reduction potential (ORP) on the production of medium-chain fatty acid ethyl esters (MCFAEEs) during wine fermentation. The results showed that ORP operation can manipulate the concentration of MCFAEEs in wine, with the highest level obtained at 0 mV. The findings provide insights into improving the aroma quality of wine.

Automated Density Measurement With Real-Time Predictive Modeling of Wine Fermentations

James Nelson et al.

Summary: In this study, in situ density measurements based on differential pressure were combined with a wine kinetic model to predict the progress of a 1500-L wine fermentation. The results showed that the automated measurement method can be used to monitor and predict ongoing fermentations in commercial wineries.

Monitoring Site-Specific Fermentation Outcomes via Oxidation Reduction Potential and UV-Vis Spectroscopy to Characterize Hidden Parameters of Pinot Noir Wine Fermentations

Gordon A. Walker et al.

Summary: Real-time process metrics, such as ORP probes and UV-Vis spectroscopy, were used in this study to assess the fermentation process of wines. The study found site-specific differences in fermentation kinetics, phenolic compound extraction, and elemental composition, which may influence the final redox status of the wines. Monitoring ORP alongside other parameters like Brix, temperature, and phenolic extraction is recommended for tracking fermentations effectively.
