Summary: The potential of nanomaterials in food technology is well-established, but their commercial use requires careful risk assessment. This study assessed the safety of bacterial nanocellulose (BNC) as a food additive and found that it was not absorbed in the gastrointestinal tract. While more toxicological research is needed, these results strengthen the idea that BNC can be considered a safe food additive.

Compared to other hydrocolloidal products, BC:CMC demonstrated superior performance in stabilizing and enhancing the rheological profile of the emulsions.
