The yoghurt-like product showed a gel structure similar to dairy yoghurt, making it a promising plant-based alternative. Further research is needed to improve the bitterness of raw seeds and achieve a more pleasant MO-based beverage. The developed products have the potential to become a source of high-protein plant-based food.
