Development of an Ene Reductase-Based Biocatalytic Process for the Production of Flavor Compounds

Summary: Ene reductases are natural catalysts that can biocatalytically reduce activated alkenes, providing a biobased alternative for metal-catalyzed and organocatalyzed double-bond reductions. This study investigated the synthetic potential of a wild-type ene reductase library to produce flavor compounds. Several highly efficient ene reductases were identified, and Pbr-ER from Pseudomonas brassicacearum was chosen for further characterization and process optimization. The optimized reaction conditions achieved a high conversion yield (>93%) of 2E-decenal within 24 hours at a substrate concentration of 40 g/L.

Similarity based enzymatic retrosynthesis
