The Effect of Batter Characteristics on Protein-Aided Control of Fat Absorption in Deep-Fried Breaded Fish Nuggets

Summary: The effect of HPDSP on the physicochemical properties and structure of shrimp myofibrillar protein (MP) was investigated. The results showed that an appropriate amount of HPDSP improved the strength, gel quality, and water holding capacity of MP gel (MPG), while excessive starch had a negative impact on MPG structure and gel quality. HPDSP had no significant effect on the protein composition and secondary structure of MPG. Additionally, HPDSP altered the water state in MPG and resulted in a dense three-dimensional network structure.
