Preparation and characterization of crosslinked starch films pretreated with sodium hydroxide/amide/water solvent system

Zhulian He et al.

Summary: Potato starch was pretreated with a NaOH/amide/water solvent system and then crosslinked with epichlorohydrin to form a molecular network. By incorporating polyvinyl alcohol, a crosslinked starch-polyvinyl alcohol film (SPF) was successfully fabricated. The SPF prepared from the NaOH/urea/formamide solvent system exhibited the most homogeneous cross-section, high crystalline intensity, and thermal stability, indicating excellent compatibility between the crosslinked starch and PVA.

Insight into the biphasic transition of heat-moisture treated waxy maize starch through controlled gelatinization

Xia Zhao et al.

Summary: The study shows that under heat-moisture treatment (HMT), starch undergoes biphasic transition, forming two viscosity peaks corresponding to gelatinization of internal and peripheral crystalline lamellae. HMT treatment enhances the gelatinization of peripheral crystalline lamellae in starch granules, leading to significant disruption in birefringence and decreased relative crystallinity.

Yikai Ren et al.

Summary: Pulse crops, such as peas, lentils, and faba beans, are increasingly recognized in the agri-food sector for their beneficial health properties and potential as a source of starch and protein. The starches extracted from these pulse crops have unique molecular and granular structures, resulting in high viscosity, strong gelling properties, and low digestibility, making them suitable for various industrial applications. Future research directions aim to enhance fractionation efficiency, improve physicochemical properties, and expand industrial utilization of pulse starches.
