The heritability of pescetarianism and vegetarianism

Summary: Genetic factors have a significant influence on individuals' food preferences, as well as their decision to abstain from eating meat and fish. In a study conducted on a Dutch twin sample, it was found that genetic factors accounted for a large proportion of variation in pescetarianism and vegetarianism. Different meats and fish were abstained from for different reasons, with health concerns being the main reason for abstaining from pork, dislike for poultry, fish, and shellfish, and beliefs for abstaining from beef.

Changes in genetic trends in US dairy cattle since the implementation of genomic selection

Summary: Genomic selection accelerates genetic changes in populations by increasing accuracy and decreasing generation interval. The genetic gain and inbreeding levels of US dairy cattle breeds since the implementation of genomic evaluations in 2009 were examined. The Holstein and Jersey breeds have seen the most significant increase in genetic gain since then.

Characterization of semen type prevalence and allocation in Holstein and Jersey females in the United States

Summary: Based on data analysis, we characterized the prevalence of semen types and their allocation in inseminating Holstein and Jersey females in the US. It was found that beef breed sires were widely selected to produce beef crossbred calves. The use of sexed semen and beef semen in inseminations increased from 2019 to 2021, with larger dairy herds driving this increase.

Summary: The rise of meat analogues and alternative protein products is faced with technological challenges. Understanding the differences between muscle and alternative proteins is crucial for creating fibril structure and flavor that mimic meat. Plant-based alternatives dominate the market, while mycoprotein, algae, and insects are emerging sources. However, producing meat analogues may compromise nutritional value and safety. Therefore, scientists and entrepreneurs need to examine and understand the inherent differences and develop new approaches to overcome technical challenges.

Veal and beef meat quality of crossbred calves from dairy herds using sexed semen and semen from double-muscled sires

Summary: The use of sexed semen in dairy farms facilitates crossbreeding between beef and dairy breeds, resulting in improved meat production. Through quantitative and qualitative evaluations, this study found that the meat produced by dairy farmers using sexed semen was higher in quality than that produced by specialized fatteners. There were minor differences in veal quality between different crossbreed combinations, while intensive beef production showed slight variations based on breed mix.

The analysis included information on journals, authors, countries, institutions, as well as the trends in VOC research on meat. The study identified collaborations among authors and countries through a social network analysis, generated a network map of authors' keywords through a keyword analysis, traced the research subjects and methods/instruments used, and highlighted the need for further research.

Heritability and genetic correlations between marbling in longissimus dorsi muscle and conventional economic traits in Nellore beef cattle

Inter-animal genetic variability exist in organoleptic properties of prime beef meat

Positive genetic correlations were found between tenderness, juiciness, and flavour, while negative correlations were observed between these traits and chewiness. Weak genetic correlations were identified between sensory traits and carcass weight, conformation, and subcutaneous fat cover.
