The spray-dried powders showed lower moisture content, higher polyphenol content, and better oxidative stability compared to freeze-dried samples. The encapsulated powder subjected to spray-drying demonstrated enhanced antioxidant capacity, improving the oxidative stability of mayonnaise, making it a potential natural antioxidant food additive in the food industry.
