Behavior of wheat flour dough at different pretreated temperatures through rheological characteristics and molecular interactions of proteins

Summary: The rheological properties and chemical interactions of doughs prepared at different temperatures were evaluated. The results showed that preheating enhanced the rigidity of the doughs and weakened their processing performance. Preheating led to the polymerization of gluten and the formation of glutenin macropolymers. The migration of water also influenced the hydrogen bond and hydrophobic interaction in the doughs, directly affecting their processability.

Effects of epigallocatechin-3-gallate on the structural hierarchy of the gluten network in dough

Summary: This study investigated the effects of EGCG concentration on the gluten network in dough. At micro scale, EGCG at 1.0% or higher disrupted the gluten network, as evidenced by increased lacunarity and disorganization. At nano-scale, increasing EGCG concentration decreased bound water, increased bulk water, and reduced the amount of glutenin macromolecule. At atomic scale, EGCG reduced disulfide bonds but increased hydrogen bonds, ionic bonds, and hydrophobic interactions in the gluten network. However, at the molecular level, EGCG caused instability in secondary structure and disulfide bridge conformation. Overall, EGCG disrupted the gluten network and resulted in loose aggregation morphology.
