Improving antioxidant ability of functional emulsifiers by conjugating polyphenols to sodium caseinate

Summary: The study investigated the effect of polyphenol structures on the antioxidant activity of protein and developed protein-polyphenol complexes with better physical and oxidation stabilities. Different polyphenols were found to either improve or hinder NaCas' antioxidant abilities. The number and location of free phenolic hydroxyl groups, binding affinity between protein and polyphenol, and protein conformation were identified as key factors determining the antioxidant properties of the complexes. Additionally, novel antioxidant emulsifiers were successfully obtained for potential application in nanodelivery of functional oil.

Enrichment of mayonnaise with a high fat fish oil-in-water emulsion stabilized with modified DATEM C14 enhances oxidative stability

Summary: Enrichment of mayonnaise with delivery emulsions (DEs) containing 70% fish oil resulted in larger droplets and lower viscosity, while mayonnaises with DATEMs in DEs had higher zeta potential. Mayonnaise with DATEM C14 showed thicker interfacial layer and lower rancid odor intensity compared to other samples, benefiting from the antioxidant location at the interface.

Novel Pickering High Internal Phase Emulsion Stabilized by Food Waste-Hen Egg Chalaza

Summary: The study explores the utilization of chalaza as a natural emulsifier for high internal phase emulsions (HIPEs). By adjusting the pH and ionic strength, stable Pickering HIPEs were successfully generated with excellent stability against coalescence and flocculation during storage. Various rheological models were tested on the HIPEs, demonstrating their outstanding stability and the formation of a percolating 3D-network providing viscoelastic and self-standing features.
