Phenolic-protein interactions: insight from in-silico analyses - a review

Fibrous meat analogues containing oat fiber concentrate and pea protein isolate: Mechanical and physicochemical characterization

Summary: A new generation of plant-based texturized meat analogues, made by combining oat fiber concentrate (OFC) and pea protein isolate (PPI) and processed with high-moisture extrusion, showed that OFC reduced the structural strength of the analogues, while processing conditions strengthened the structure. Micro-CT imaging revealed that higher OFC content resulted in smaller void thickness, reducing water holding capacity. In vitro gastrointestinal model demonstrated that the extractability and viscosity of β-glucan were well preserved, especially at lower processing temperatures.

Physical Properties of Extrudates with Fibrous Structures Made of Faba Bean Protein Ingredients Using High Moisture Extrusion

Summary: This study found that using faba bean protein ingredients can produce meat analogues with a fibrous structure. Increasing the content of faba bean protein isolate (FPI) increases the hardness, gumminess, chewiness, and cutting strength of the meat analogues, resulting in darker color and decreased water absorption capacity. Increased feed water content (FWC) has a weaker and opposite effect on these properties.

Understanding Public Willingness to Pay More for Plant-based Meat: Environmental and Health Consciousness as Precursors to the Influence of Presumed Media Influence Model

Summary: Expanding upon the IPMI model, this study explores the impact of prior beliefs on individuals' willingness to pay more for plant-based meat. The findings suggest that attention to media messages on plant-based meat is positively associated with presumed others' attention, and this attention influences attitudes, social norms, and willingness to pay more. Furthermore, prior beliefs, such as environmental and health consciousness, predict attention to media messages on plant-based meat.

Molecular structure-affinity relationship of selected phenolic compounds for lupin seed γ-conglutin
