Characterization of the key aroma compounds in aged Chinese Xiaoqu Baijiu by means of the sensomics approach

Summary: The aromatic characteristics of aged Xiaoqu Baijiu were investigated using the sensomics approach, revealing a higher number of aroma-active compounds compared to fresh Xiaoqu Baijiu. Several key aroma compounds were identified using sensomics, including 3-hydroxy-4,5-dimethyl-2(5H)-furanone (sotolon), vanillin, and 3-(methylthio)propionaldehyde (methional). Additionally, other compounds such as 1,1-dimethoxyethane, 3-methylbutanal, dimethyl trisulfide, ethyl acetate, and ethyl isovalerate were found to significantly contribute to the aroma characteristics of aged Xiaoqu Baijiu.

Exploring the impacts of traditional crafts on microbial community succession in Jiang-flavored Daqu

The results show that traditional crafts regulate microbial community succession through temperature, moisture, and acidity, leading to the production of flavor compounds. The flipping processes have significant effects on microecology and microbial metabolism. Furthermore, the fermentation process significantly increases the levels of flavor precursors and secondary metabolites in Jiang-flavored Daqu.

Microbial succession and its effect on key aroma components during light-aroma-type Xiaoqu Baijiu brewing process

Summary: The microbial composition and dynamics during the production of light-aroma-type Xiaoqu Baijiu were investigated in this study. The core microbes involved in the production of Xiaoqu Baijiu were identified as Rhizopus, Pichia, Wickerhamomyces, Saccharomyces, Acinetobacter, Lactobacillus, and Weissella. The microbial succession during brewing could be divided into two phases, with Rhizopus and Acinetobacter dominating the early stages and Pichia, Wickerhamomyces, Saccharomyces, and Lactobacillus increasing in abundance during the later stages. The water, amino acid nitrogen, acid, and reducing sugar contents were significantly correlated with the fungal and bacterial communities in grains. Pichia, Rhizopus, Saccharomyces, and Wickerhamomyces played important functional roles in the formation of Xiaoqu Baijiu flavor.

Evaluation of six commercial koji on the formation of biogenic amines and higher alcohols in rice wine

Summary: This study explores the application of commercial koji in rice wine brewing and finds significant differences in microbial composition among different koji. Some koji can degrade starch and improve the efficiency of wine production, while contaminating microorganisms are associated with biogenic amines and higher alcohols in rice wine. Screening beneficial yeasts with low production of higher alcohols and avoiding bacterial contamination are suggested to improve the quality of rice wine.

Investigation of microbial composition and functional characterization of Zangqu using high throughput sequencing

Summary: The microbial composition and function of Zangqu, a saccharifying starter used in the production of highland barley wine, were studied using high throughput sequencing technology. The analysis revealed predominant presence of four fungal and six bacterial phyla in Zangqu samples. Study on microbial communities and higher alcohol formations in the fermentation of Chinese Xiaoqu Baijiu produced by traditional and new mechanical technologies

Studying the effects of mechanization on microbial community and flavor is crucial for Baijiu development. Metagenomic and metatranscriptomic analyses identified 5 core microorganisms in Baijiu fermentation, showing differences in microbial communities between traditional and new technologies. Initiating abundances of Saccharomyces cerevisiae and Pichia kudriavzevii were higher in traditional technology, while Lactobacillus exhibited advantages in both traditional and new technologies.

The impact of environmental factors on the environmental bacterial diversity and composition in the Jiang-flavoured Baijiu production region
