Fabrication of Printable Colorimetric Food Sensor Based on Hydrogel for Low-Concentration Detection of Ammonia

Summary: With the increase in demand for ready-to-cook foods, ensuring the freshness and safety of these foods has become a concern. This paper presents a printable sensor based on a hydrogel-containing pH indicator for detecting ammonia gas. The sensor, composed of biocompatible polymers, demonstrated visible color change as a function of ammonia concentration during food spoilage. By adding polyacrylonitrile to improve transport speed of ammonium ions, the sensor showed reproducibility and selectivity in detecting various gases during the food spoilage process.

Quantitative Colorimetric Detection of Dissolved Ammonia Using Polydiacetylene Sensors Enabled by Machine Learning Classifiers

Summary: This study demonstrates a simple and quantitative naked eye detection of dissolved ammonia using polydiacetylene (FDA) sensors. The color change of the sensor was studied by UV-vis spectroscopy and showed a relationship with ammonia concentration. Furthermore, on-site monitoring of dissolved ammonia was achieved using machine learning classifiers and color images. The results indicate that the developed PDA sensor allows for accurate naked eye detection of dissolved ammonia and on-site detection with the assistance of smartphones and machine learning.

In this review, the advances in volatile amine sensors for food quality monitoring over the past decade are examined. The role of volatile and biogenic amines as food quality indicators is discussed, and a comprehensive overview of different amine gas sensors is provided, including their transduction methods, operation strategies, and materials employed. Challenges and future opportunities in the development of new amine sensors are also presented.

Colorimetric detection of acid-base in organic solvents, water, and food products using polydiacetylene/Zn2+/ZnO nanocomposites with tunable sensitivity

Summary: This study explores the application of colorimetric sensors based on polydiacetylene (PDA)/Zn2+/ZnO nanocomposites for detecting organic acid-base in various organic solvents and food products. The sensitivity of the sensors varies with the solvent properties, and it can be fine-tuned by adjusting the ratios of ZnO within the nanocomposites. The solid-state sensors embedded in nylon filters can determine the concentration of sorbic acid in fruit juices and indicate the freshness of milk through naked-eye detection.

Polydiacetylene-based colorimetric and fluorometric sensors for lead ion recognition

Summary: The development of novel sensors for the detection of lead ions has attracted increasing interest due to their toxic effects on human health and the environment. In this study, two new polydiacetylene-based liposome sensors were developed for the colorimetric and fluorometric recognition of lead ions in aqueous solution. These sensors exhibited high selectivity and sensitivity, and were successfully applied to detect trace amounts of lead ions in real water samples.
