Practical application of nanoencapsulated nutraceuticals in real food products; a systematic review

Mohammad Nejatian et al.

Summary: Due to increasing consumer awareness, the food industry is shifting towards using nutrients and natural bioactives instead of synthetic additives to produce functional foods. However, directly incorporating these compounds into foods is challenging. Nanoencapsulation has been proposed as a solution, but there is limited research on incorporating bioactive-loaded nanocarriers into food matrices.

Fabrication of vitamin D3 nanoemulsions stabilized by Tween 80 and Span 80 as a composite surface-active surfactant: Characterization and stability

Xiaoxia Zhang et al.

Summary: A phase transformation based nanoemulsion fabrication process was developed to encapsulate vitamin D-3 with Tween 80 and Span 80. The encapsulated vitamin D-3 showed higher stability and sustained release compared to the un-encapsulated one. The study provides new insight into the application of vitamin D-3 nanoemulsions stabilized by Tween 80 and Span 80 in the food industry.

Investigation of Factors Influencing Formation of Nanoemulsion by Spontaneous Emulsification: Impact on Droplet Size, Polydispersity Index, and Stability

Mohammed S. Algahtani et al.

Summary: This study investigates the factors that affect the characteristic parameters and stability of nanoemulsion formation prepared by the spontaneous emulsification method. The composition and preparation conditions, such as the oil phase, vortexing time, K-m ratio, and pH of the water phase, were found to have a significant impact on the physicochemical characteristics and stability of the nanoemulsion system.

Nano Matrix Soft Confectionary for Oral Supplementation of Vitamin D: Stability and Sensory Analysis

Mohammad Zubair Ahmed et al.

Summary: Vitamin D deficiency is prevalent among nearly 50% of the global population, and this study developed a vitamin D oil-in-water nanoemulsion incorporated in edible gummies to enhance bioavailability and stability. The nanoemulsion prevented degradation of vitamin D and retained its activity over 15 days. The vitamin D gummies formulated with the nanoemulsion had optimal hardness and maintained taste and acceptance over 45 days of storage. This study highlights the potential of nanoemulsions to improve the delivery and effectiveness of vitamin D.

Zeta potential changing nanoemulsions based on a simple zwitterion

Faezeh Sharifi et al.

Summary: Phosphorylated tyramine loaded nanoemulsion showed a mean droplet size of 43.1.7 nm and zeta potential of -8.40 mV, with a significant shift in zeta potential from -8.40 mV to +1.2 mV after cleaving phosphate moieties. The cellular uptake of zeta potential changing oily droplets was improved by 2.4-fold. Phosphorylated zwitterions could be a promising alternative as auxiliary agents for altering zeta potential in nanoemulsions.
