New insights of the application of water or ethanol-water plant extract rich in active compounds in food

Summary: Plant extracts are natural antioxidants that can be used as food additives to extend shelf life and prevent undesirable changes in food properties. This review summarizes the recent literature on water or ethanol-water plant extracts used in various food products as flavors, colorings, and preservatives. The use of plant extracts as natural alternatives to synthetic antioxidants is expected to continue growing in the future, but challenges such as stability, purity, compatibility, price, and sensory aspects should be taken into consideration.
