Antibacterial activity and antibacterial mechanism of ethanol extracts of Lentinula edodes (Shiitake) and Agaricus bisporus (button mushroom)

Summary: The study aimed to compare the antimicrobial activity, mechanism, and components of ethanol extracts from Lentinula edodes and Agaricus bisporus. Both extracts showed similar antibacterial effects on pathogens, potentially causing DNA and protein leakage, as well as disrupting the permeability of bacterial cell membranes through bioactive molecules.

Summary: Eritadenine, a cholesterol lowering component found in Lentinula edodes mushrooms, can be effectively extracted using pressurized liquid extraction (PLE) technique with water as the solvent at a temperature of 142 degrees C. PLE also provides higher yields of total phenolics and antioxidant capacity compared to classical aqueous ethanol extraction. Eritadenine is thermally stable, making it suitable for enriching thermally treated foods.
