It has high sugar content, drought resistance, and economic value. Carob fruit, including the pulp and seed, is a rich source of bioactive components. Carob finds wide applications in different industries as an antioxidant, thickener, stabilizer, lactic acid producer, and emulsifier. The trend towards natural products has further highlighted the use of carob due to its excellent nutritional and therapeutic profile. Carob bean gum is extensively used in the food industry. This review focuses on the nutritional composition, bioactive profile, functional properties, and recent findings on carob.

Ceratonia siliqua pods (Carob) methanol extract alleviates doxorubicin-induced nephrotoxicity via antioxidant, anti-inflammatory and anti-apoptotic pathways in rats

Summary: This study aimed to evaluate the potential protective effect of carob extract on doxorubicin-induced nephrotoxicity. The results showed that carob extract significantly restored kidney function parameters and levels of oxidative stress markers. It also stimulated the production of IL-10 and TGF-β, while decreasing the levels of IL-6 and TNF-α. Furthermore, carob extract reversed the gene expression of COX-2, caspase-9, and Bax.

Ceratonia siliqua L. kibbles, seeds and leaves as a source of volatile bioactive compounds for antioxidant food biopackaging applications

Summary: Macerates of kibbles, seeds and leaves of Ceratonia siliqua L. were prepared and analysed for their bioactive volatile compounds, antioxidant capacity, antimicrobial properties, and potential use in biopackaging. The study found that the seeds macerates had stronger antioxidant capacity, but weak antibacterial activity. The macerates were incorporated into a cellulose polymer adhesive to create a biopackaging film, which showed promising antioxidant activity and no migration of volatile or non-volatile compounds. The study suggests the potential for future production of active biopackaging at an industrial scale.

This research provides novel information for the development of plant-based antimicrobial ZnONPs.

Evaluation of Different Extraction Methods on the Phenolic Profile and the Antioxidant Potential of Ceratonia siliqua L. Pods Extracts

Summary: This study investigated the effects of different extraction processes on carob pods and found that the nature of the extraction process significantly influenced the phenolic compounds and antioxidant capacity. The content of total phenolic compounds, total flavonoids, and condensed tannins varied with different extraction methods. The extracts also exhibited different antioxidant activity, with IC50 values ranging from 11.33 to 6.07 μg/mL. HPLC analysis identified nine compounds and showed a positive correlation between phenolic compound contents and antioxidant activity.

Through the selection of the optimal solvent and extraction methodology, the functional gluten-free bread with improved compositional and technological parameters is successfully prepared.
