Correlations between the Chemical, Microbiological Characteristics and Sensory Profile of Fungal Fermented Food

Summary: This study investigated the correlations between the sensory characteristics of fungal fermented foods and their chemical and microbiological characteristics. The results showed that certain amino acids, particularly glutamic acid and aspartic acid, were associated with overall liking of the products. Products fermented with Rhizopus oligosporus had better sensory characteristics compared to other strains, and taste and texture were found to significantly impact overall liking. The findings contribute to the development of acceptable sensory fungal fermented foods and screening potential starters.
