The Effect of Cinnamon and Ginger Spices on Anthocyanins in Sweetened Roselle Beverages

Summary: This study investigates the potential benefits of adding spices (cinnamon and ginger) to a sweetened Roselle beverage on its anthocyanins. It was found that the sweeteners used did not significantly affect the initial anthocyanin content or its degradation. However, the addition of cinnamon to the beverages increased the total phenolic and antioxidant activity, reduced anthocyanin degradation, and improved color stability during storage.
