Ultra-Processed Food Consumption and Increased Risk of Metabolic Syndrome in Adults: The ELSA-Brasil

Summary: The study aimed to investigate the association between consumption of ultra-processed food (UPF) and the incidence of metabolic syndrome (MetS). The results showed that for every increase of 150g/day in UPF consumption, there was a 7% higher risk of incident MetS. Compared to the first quartile, those in the fourth quartile had a 33% increased risk. These findings have important implications for diabetes and cardiovascular disease prevention and management.

Co-delivery of EGCG and lycopene via a pickering double emulsion induced synergistic hypolipidemic effect

Summary: The concept of synergy in the food industry has led to the development of a strategy using a pickering double emulsion (PDE) system to deliver hydrophilic epigallocatechin-3-gallate (EGCG) and lipophilic lycopene (LYC) separately or together to induce a synergistic hypolipidemic effect. The study found that EGCG improved the physical stability of PDE while LYC had a negative impact. All groups showed a significant reduction in serum and liver cholesterol and weight of tissue fats. The enhanced bioaccessibility of EGCG and LYC delivered by PDE strengthened their hypolipidemic properties through different pathways.
