Numerical analysis of coupled heat and mass transfer processes in packaged tomatoes throughout the cold chain

Summary: This study developed a computational fluid dynamics model to simulate the heat and mass transfer characteristics of fresh tomatoes. The results showed that the tomato temperature had a root-mean-square error (RMSE) of 0.579 degrees C and a mean absolute percentage error (MAPE) of 3.89%, while the tomato mass loss had an RMSE of 0.737 g and a MAPE of 9.87%. A sensitivity analysis quantified the effect of different cold chain breaking (CCB) parameters on fluctuations in tomato temperature and mass loss, revealing that CCB increased tomato temperature and moisture loss, particularly during the second CCB. The study also found that CCB increased the inhomogeneity of temperature distribution but reduced the inhomogeneity of tomato mass loss.

Ventilated packaging is crucial in maintaining fruit quality, but there are various factors affecting the optimal packaging for different supply chains. In this study, physics-based digital twins were developed to simulate the hygrothermal evolution of strawberries in 21 types of ventilated packaging, predicting fruit quality and shelf life metrics. The research identified the best-performing package and highlighted the vulnerability of certain locations within each packaging type.
