Bioactive Peptides: An Understanding from Current Screening Methodology

Nhung Thi Phuong Nong et al.

Summary: This article provides an overview of bioactive peptides with an emphasis on the current strategy used for screening and characterization methods. Understanding the biological activities of peptides, mechanism inhibitions, and the interaction of the complex of peptide-enzyme is commonly evaluated using specific in vitro assays and molecular docking analysis. Well-organized and well-designed methods are necessarily required to enhance the efficiency of studying the potential peptides.

Manufacture of Whey Protein Hydrolysates Using Plant Enzymes: Effect of Processing Conditions and Simulated Gastrointestinal Digestion on Angiotensin-I-Converting Enzyme (ACE) Inhibitory Activity

Marie Peslerbes et al.

Summary: This study evaluated the impact of three plant enzymes on the manufacture of whey protein hydrolysates. The results showed that low degrees of hydrolysis in papain and bromelain treatments were associated with increased antihypertensive properties, while this was not the case for ficin treatment. Simulated gastrointestinal digestion further enhanced the antihypertensive properties of hydrolysates made with papain and bromelain. These findings suggest that the plant enzymes used in this study can be suitable candidates for developing ingredients with bioactive properties.

Fermentation of whey protein concentrate by Streptococcus thermophilus strains releases peptides with biological activities

Lisa Solieri et al.

Summary: In this study, Lactobacillus helveticus and Streptococcus thermophilus strains isolated from Parmigiano Reggiano production were evaluated for their ability to ferment whey protein concentrate (WPC) and release bioactive peptides. The results showed that WPC fermented with S. thermophilus RBC06 had the highest antioxidant activity and inhibitory activities against angiotensin-converting enzyme and dipeptidyl-peptidase-IV. Several bioactive peptides, including angiotensin-converting enzyme inhibitors, were identified and quantified. This study paves the way for the potential use of S. thermophilus RBC06 as a new bioactive peptide producer and the application of WPC hydrolysates in designing whey-based beverages with enhanced health properties.

Insights on the bacterial composition of Parmigiano Reggiano Natural Whey Starter by a culture-dependent and 16S rRNA metabarcoding portrait

Laura Sola et al.

Summary: This study integrated 16S rRNA metabarcoding and culture-dependent methods to analyze the bacterial communities of 10 natural whey starters (NWS) used in Parmigiano Reggiano cheese production. Two main NWS community types were identified, with different functional pathways. Co-culturing experiments showed the importance of bacterial interactions for fermentative performance in NWS.

Peptidomics: new trends in food science

Serena Martini et al.

Summary: In recent years, the field of food peptidomics has gained increasing relevance in food science, defined as the pool of peptides existing in food products or generated during food processing, storage or digestion. Advances in high-resolution mass spectrometry techniques have provided a more detailed picture, although not yet exhaustive, of food-derived peptides. Efforts to improve the identification of short peptides and the analysis of large data sets are still necessary to further develop food peptidomics techniques.

Whey Utilisation: Sustainable Uses and Environmental Approach

Elizabeta Zandona et al.

Summary: The dairy industry produces a large amount of whey as a by- or co-product with high organic matter content, causing significant environmental issues. In recent decades, efforts have been made to convert unwanted whey products into valuable raw materials for biotechnological and food applications. Sustainable whey management focuses on producing value-added products such as whey powders, proteins, functional foods, bioplastics, biofuels, etc. through new refining methods and integrated processes.
