Effect of the Addition of Selected Herbal Extracts on the Quality Characteristics of Flavored Cream and Butter

Malgorzata Ziarno et al.

Summary: This study aimed to investigate the impact of selected herbal extracts (dried leaves of Thymus vulgaris L., Origanum vulgare L., Satureja hortensis L., Rosmarinus officinalis L., and Ocimum basilicum L.) on various parameters of fermented flavored cream and resulting flavored butter. The extracts showed no inhibition on starter lactic acid bacteria but contributed to a shorter fermentation process and affected the bacterial counts during fermentation and refrigerated storage. However, they had no influence on water content, butter plasma pH, butter fat acidity, and water dispersion, except for the oxidative stability of milk fat where rosemary and thyme extracts had a positive effect.

Opportunities and challenges for the nanodelivery of green tea catechins in functional foods

A. Rashidinejad et al.

Summary: Green tea, rich in antioxidant catechins, can benefit human health, but its stability and bioavailability are affected by environmental and gastrointestinal conditions. Nanocarriers can protect catechins and be used for designing efficient delivery systems. Further research is needed to understand the mechanisms and safety of nanodelivery of catechins.

Effect of Green Tea Supplementation on Antioxidant Status in Adults: A Systematic Review and Meta-Analysis of Randomized Clinical Trials

Niloufar Rasaei et al.

Summary: Green tea supplementation has significant effects on total antioxidant capacity (TAC) in adults, with heterogeneity between studies related to gender and BMI. Meta-regression analysis suggests a linear inverse association between the dosage of green tea and significant change in malondialdehyde (MDA). Further research is needed to validate these findings.
