Summary: Double-layered emulsions stabilized by bacterial cellulose nanofibers/soy protein isolate/chitosan complex were prepared using layer-by-layer self-assembly technology and investigated for their physical and delivery properties. The results demonstrated that the double-layered emulsions exhibited high pH-sensitivity and relatively higher stability under acid environment, and the bioaccessibility of curcumin delivered by the double-layered emulsions was significantly higher than that of curcumin delivered by single-layered emulsions.

Study on the interaction between succinylated soy protein isolate and chitosan and its utilization in the development of oil-in-water bilayer emulsions

Summary: Electrostatic interactions between succinylated soy protein isolate (SSPI) and chitosan (CS) were utilized to develop oil-in-water bilayer emulsions, showing increased binding sites and enhanced electrostatic force. The structure of SSPI-based bilayer emulsions was observed to be tighter compared to SPI-based emulsions, forming a bridge-like 3D network structure with CS. This study has implications for emulsion-based LBL models and provides a new material for delivery systems protecting biologically active compounds.

The effects of thermal treatment on emulsifying properties of soy protein isolates: Interfacial rheology and quantitative proteomic analysis

Summary: A novel nanocarrier with high hydrophobicity for colonic delivery of lactoferrin was successfully developed using modified coaxial electrospinning, maintaining lactoferrin's anti-colon cancer activity. The sustained release of lactoferrin in the colon was mainly through an erosion mechanism, and a synergistic action of gut microbiota adhesion and their metabolites was found to contribute to the disintegration of the nanofibers.

Summary: In this study, soy protein isolate (SPI) and epigallocatechin-3-gallate (EGCG) covalent composite microgel particles were prepared and used as stabilizers for beta-carotene-loaded high internal phase Pickering emulsions (HIPPEs) with antioxidant capacity. The SPI-EGCG microgel particles showed improved stabilization properties compared to SPI alone, resulting in smaller particle size, higher apparent viscosity, and better stability of the HIPPEs. The study highlighted the importance of designing HIPPEs stabilized with protein-polyphenol composite particles for the delivery of lipophilic bioactive compounds.
