Milk from Halari Donkey Breed: Nutritional Analysis, Vitamins, Minerals, and Amino Acids Profiling

Summary: This research characterized the nutritional constituents of Halari donkey milk, including proximate analysis, water activity, titratable acidity, energy, and microbiological analysis. It was found that the composition of Halari donkey milk was consistent with previous studies and similar to human milk. Halari donkey milk had low fat, protein, and ash content, high lactose content, and suitable taste. It was also microbiologically safe and contained significant amounts of minerals, vitamins, and amino acids.

Genetic and Population Structure of Croatian Local Donkey Breeds

The genomic history and global expansion of domestic donkeys

Summary: Donkeys have played an essential role in human history as beasts of burden, particularly in semi-arid and upland environments. Despite their global significance and support to low- to middle-income communities, they have been insufficiently studied. Through genome analysis, this study reveals the domestication history of donkeys, with a single domestication event in Africa around 5000 BCE. The study also uncovers a previously unknown genetic lineage in the Levant that contributed to increasing ancestry toward Asia. The management of donkeys involved inbreeding and the production of giant bloodlines during the Roman era when mules were of great importance to the economy and military.

Donkey milk and fermented donkey milk: are there differences in the nutritional value and physicochemical characteristics?

Summary: This study evaluated the nutritional value and characteristics of fresh and fermented donkey milk, along with the impact of refrigerated storage on the fermented milk. Fermented milk had higher acidity and lower levels of lactose, minerals, and amino acids compared to fresh milk, but showed better fatty acid profile. Storage of fermented milk led to decreased lactose content, improved amino acid profile, but negative impact on fatty acids. Overall, both types of donkey milk present important nutritional value, and fermented donkey milk can be refrigerated stored for up to 21 days.
