Summary: Nowadays, people are increasingly interested in the food they consume, with authenticity and natural origin being amongst the most valued issues. The Iberian pig and its cured products are highly regarded internationally, but authenticating the pig's feeding regime can be challenging. This study used faecal volatilome information to differentiate between different feeding regimes and determine the commercial category of Iberian products. Good classification rates were achieved, highlighting the potential of using GC-IMS for authentication and preventing labeling fraud.

Authenticity and Typicity of Traditional Cheeses: A Review on Geographical Origin Authentication Methods

Summary: Food fraud, intentional actions to deceive purchasers and gain economic advantage, results in billions of dollars of economic cost globally each year. Cheese, especially those with protected labels, is highly impacted as consumers are willing to pay more for traditional products. Various authentication methods, including chemical, physical, and DNA-based methods, are being used for cheese origin authentication. Isotope and elemental fingerprinting show consistent accuracy, while other methods like near-infrared spectroscopy and nuclear magnetic resonance need further study. DNA-based methods, such as metabarcoding, show potential. Combining different methods and studying cheese microbiota at the strain level can also be of interest in this field.

Determining the presence of undeclared animal species using Real-time PCR in canned and ready-to-eat meat products in South Africa

Summary: Real-time PCR is effective in detecting animal species in highly processed complex food matrices, with 27% of ready-to-eat meat products containing undeclared species in this study. Surprisingly, products claiming to be pork-free still tested positive for pork, highlighting the importance of implementing precautionary labelling in processed meat products.
