Emulsifier crystal formation and its role in periodic deformation-relaxation of emulsion droplets upon cooling

Summary: When emulsion droplets stabilized by monoglyceride stearate are cooled below its crystallization temperature, they deform and then relax back to a spherical shape. This process repeats multiple times and is caused by the formation of brittle crystalline interfacial layers and stress build-up in these layers due to shrinkage of the oil phase upon cooling. The high stiffness of the interfacial crystal layers leads to wrinkling of the interface, resulting in shape deformations that continue until the interfacial structure ruptures.

Influence of the Triglyceride Composition, Surfactant Concentration and Time-Temperature Conditions on the Particle Morphology in Dispersions

Summary: There are many applications for crystalline triglyceride-in-water dispersions in the life sciences and pharmaceutical industries. The particle morphology and size distribution are the main factors influencing the properties of these dispersions. In this study, the influence of the dispersed-phase composition on the crystallization and melting behavior of these systems was investigated. Different particle morphologies were obtained by varying the dispersed-phase composition, and smaller droplets were obtained after melting. The self-emulsification and coalescence events were influenced by the melting range of the fat and the surfactant concentration.

Impact of Saturation of Fatty Acids of Phosphatidylcholine and Oil Phase on Properties of β-Lactoglobulin at the Oil/Water Interface

Summary: This study investigated the impact of fatty acid saturation on the interfacial properties of emulsions stabilized by beta-lactoglobulin. It was found that increasing similarity in fatty acid saturation between phosphatidylcholine and the oil phase led to higher interfacial tension.
