Effect of chitosan coating incorporated with oregano essential oil on microbial inactivation and quality properties of refrigerated chicken breasts

Summary: The effects of chitosan (CS) coating with oregano essential oil (OEO) on the microbial and physicochemical characteristics of chicken breast fillets during refrigerated storage were examined. The CS + OEO coating reduced the total viable count and Pseudomonas deceptionensis CM2 levels in chicken breast fillets. The quality attributes of chicken fillets, including pH value, color parameters, water holding capacity, and texture, were improved by the CS + OEO coating. Additionally, the CS + OEO coating inhibited lipid oxidation, the formation of total volatile basic nitrogen (TVB-N), and the generation of unpleasant odors.

Effect of Bamboo Essential Oil on the Oxidative Stability, Microbial Attributes and Sensory Quality of Chicken Meatballs

Summary: This study investigates the effectiveness of bamboo essential oil (BEO) at different concentrations on the quality, microbial growth, and sensory acceptability of meatballs stored under refrigerated conditions for 20 days. The results show that BEO has antioxidant and antibacterial properties, improving the stability and shelf life of the meatballs without affecting their color. The treated meatballs also had better flavor and acceptability compared to the control samples.

Preservation of aquatic food using edible films and coatings containing essential oils: a review

Essential oils can be added to enhance antimicrobial and antioxidant properties. This review summarizes the components and chemistry of edible films and coatings and their application in preserving aquatic food quality.
