Impact ofAloe veragel coating enriched with basil (Ocimum basilicumL.) essential oil on postharvest quality of strawberry fruit

Leila Mohammadi et al.

Summary: The study found that the edible coating prepared from the combination of Aloe vera gel and basil oil had a significant effect on delaying the respiration rate, weight loss, softening, and fungal growth of strawberry fruit while maintaining total acidity, flavor index, L*, and hue degrees color values and sensory attributes during storage. The efficacy of treatments was enhanced in samples where Aloe vera gel was combined with basil oil, especially at a concentration of 1000 mu L L(-1) of basil oil, suggesting that it could be a promising postharvest treatment for maintaining the quality of strawberry fruit during cold storage.

Analysis, occurrence, and potential sensory significance of tropical fruit aroma thiols, 3-mercaptohexanol and 4-methyl-4-mercapto-2-pentanone, in Chinese Baijiu

Xuebo Song et al.

Summary: In this study, the tropical fruit aroma thiols 3-mercaptohexanol (3MH) and 4-methyl-4-mercapto-2pentanone (4MP) were found to be important contributors to the fruity aroma of Baijiu, with differences in their content and odor activity values in different types of Baijiu. The identification of 4MP for the first time in Baijiu and the use of multivariate statistical analysis to differentiate Baijiu based on 3MH and 4MP are significant findings of this research.
