Influence of Addition of Dried Maitake and Enoki Mushrooms on Antioxidant, Potentially Anti-Inflammatory, and Anti-Cancer Properties of Enriched Pasta

Effects of UV Stress in Promoting Antioxidant Activities in Fungal Species Trametes versicolor (L.) Lloyd and Flammulina velutipes (Curtis) Singer

Summary: Trametes versicolor and Flammulina velutipes were studied for their total phenolic content (TP), total proteins (TPR), and antioxidant properties after submerged cultivation with intermittent exposure to ultraviolet light. The highest TP was found in mycelia extract from F. velutipes after 14 days and filtrate from T. versicolor after 21 days, while the highest TPR was found in mycelia extract from T. versicolor after 28 days. The analysis also revealed that p-hydroxybenzoic and protocatechuic acids were the most abundant polyphenols. The extracts from T. versicolor filtrate after 14 days and F. velutipes filtrate after 21 days showed the highest scavenging activity. The study confirmed the production of secondary metabolites and natural antioxidants in response to UV exposure stress.
