DSC Melting Profile of Cold-Pressed Hemp Seed Oil as an Authenticity Fingerprint Influenced by Scanning Rate

Summary: This study examined the possibility of using DSC melting profiles to authenticate cold-pressed hemp seed oil. The results showed that the heating rate had a significant influence on the thermal behavior of the oil, allowing for differentiation of different types of hemp seed oil. Multivariate data analysis demonstrated that DSC parameters could distinguish oils pressed from different qualities of seeds. The aim of the research was to assess the authenticity of cold-pressed hemp seed oil through its thermal characteristics at various scanning rates.

Characterisation of Selected Emulsion Phase Parameters in Milk, Cream and Buttermilk

Summary: This study compared the effects of thermal history on selected parameters of milk fat, including the size of milk fat globules, fatty acid profile, and thermal properties, in milk, cream, and buttermilk used in butter production. The results showed that cream had the largest size and variation of milk fat globules, while buttermilk exhibited chain-like milk fat globules. Buttermilk also had higher levels of monoenoic and polyenoic fatty acids. The thermal analysis revealed significant differences in fat crystallisation and melting peaks among raw milk, buttermilk, and cream. Cream exhibited greater changes in melting and crystallisation enthalpy and higher peaks compared to milk and buttermilk.

Physicochemical properties of oil extracted from camelina (Camelina sativa) seeds as a new source of vegetable oil in different regions of Iran

Shotgun Lipidomic Analysis for Differentiation of Niche Cold Pressed Oils

Summary: In this study, a fast and eco-friendly method based on shotgun-lipidomic mass spectrometry was utilized to authenticate niche edible oils. Different oils were successfully detected and distinguished based on their lipid profiles using principal component analysis (PCA). Lipidomic markers characteristic of the oils were also identified, enabling the development of new multiplexed testing methods.

Changes in Chemical Composition of Flaxseed Oil during Thermal-Induced Oxidation and Resultant Effect on DSC Thermal Properties

Summary: This study investigated the changes in chemical composition and thermal properties of flaxseed oil during thermal-induced oxidation. The oxidation level was evaluated using various parameters, and the fatty acid profile and triacylglycerol profile were examined. Differential scanning calorimetry (DSC) was used to determine the crystallization and melting profiles. The results showed that thermal-induced oxidation led to changes in chemical composition and affected the thermal properties of flaxseed oil.

Authenticity Assessment from Sesame Seeds to Oil and Sesame Products of Various Origin by Differential Scanning Calorimetry

Summary: This study conducted thermal characterization of sesame seeds and oils from different geographical origins and extraction methods using differential scanning calorimetry. The results showed that the origin of seeds did not affect the oil's melting profile, but the extraction method did. Additionally, the study found significant changes in thermodynamic parameters when adding other oils to sesame oil, and the PCA method could distinguish authentic and adulterated sesame oils.

Lipid profiling and oil properties of Camelina sativa seeds engineered to enhance the production of saturated and omega-7 fatty acids

Summary: Camelina sativa is a preferred oil crop in plant biotechnology due to its agronomic performance, oil quality, and ease of transformation. Various strategies have been used to increase the levels of saturated and omega-7 fatty acids in camelina plants, with silencing CsKASII and expressing different alleles of thioesterases being effective methods. Co-expression of CsSAD also led to significant accumulation of omega-7 fatty acids by increasing intraplastidial desaturase activity. The different transformants produced in this study showed altered physical properties in their oils, as investigated through calorimetry studies.

Differential Scanning Calorimetry as a Method for the Control of Vegetable Oils

Summary: DSC was used to study the thermophysical properties of various liquid vegetable oils, determining characteristic thermal effects and discussing identification factors based on melting curves. The coordinates and areas of endothermic peaks were found to significantly correlate with concentrations of basic fatty acids and triacylglycerols, demonstrating the effectiveness of DSC in controlling the authenticity of vegetable oils.
