Summary: SSIIIa is a key gene responsible for RS formation in rice endosperm. The increased RS content in the ssIIIa mutant is mainly attributed to the increased amylose-lipid complexes (RS5). However, the formation of RS5 elicited by ssIIIa mutation and its importance for total RS content in rice are still unclear. The inactivation of SSIIIa enhances amylose and RS content in rice without depleting starch reserves.

The physiochemical and nutritional properties of high endosperm lipids rice mutants under artificially accelerated ageing

Summary: The study found that accelerated ageing treatment significantly reduced NSL and gamma-oryzanol in ALK3 and RS4 mutants, as well as decreased the pH of cooking solution and the Tp of the second endothermic peak in DSC, indicating lipid hydrolysis and damage to the amylose-lipids complex. Additionally, all varieties had lower proportion of unsaturated fatty acids in lipids and lower breakdown, suggesting inferior lipid quality and rice eating and cooking quality after ageing treatment. However, high-lipid mutants showed better nutritional quality with higher gamma-oryzanol content and lower initial digestion rate even after storage.
